Llunca cashqui — step-by-step recipe

Llunca cashqui is a substantial wheat-and-hen soup of Áncash, rather than a smooth blended soup. Its name refers to the prepared wheat, whose swollen grains give the broth body while remaining recognisable.

In the highland home kitchen the poultry can be a firm-textured hen. Such a bird contributes a fuller-tasting broth than quick-cooking chicken pieces, but it needs patient simmering. Potatoes enter late enough to hold their shape while the wheat softens.

An ají panca dressing cooked separately in oil gives the soup an aromatic finish. Add it only when the grain and hen have had time to cook, then allow the parsley and oregano to mingle with the hot broth without boiling away their freshness.

Ingredients

Ingredients

Ingredients

  • 1200 g bone-in hen pieces, chilled, skin trimmed
  • 260 g hulled cracked wheat (llunca), dry, rinsed
  • 600 g waxy potatoes, peeled, cut into six pieces
  • 150 g carrot, cut into thick strips
  • 110 g spring onions, finely chopped
  • 50 g celery, one short stalk
  • 45 g ají panca paste, unsweetened
  • 15 g garlic, crushed
  • 3 g dried oregano, crumbled
  • 15 g fresh parsley, chopped
  • 25 ml vegetable oil, for the dressing
  • 10 g fine salt, weighed
  • 2800 ml water, for the broth

  1. Soak the llunca.Soak the 260 g rinsed wheat in 500 ml of the measured 2800 ml water in a covered bowl for 60 minutes; reserve the grain and all its soaking water. The grains are hydrated and no longer powder-dry on the surface.

  2. Start the hen broth. In a large pot bring the 1200 g hen, celery, 10 g salt and the remaining 2300 ml measured water to a gentle simmer over medium heat; skim surface foam. The broth has a steady light simmer and the first foam has been removed. Keep uncooked poultry separate from ready-to-eat garnishes.

  3. Cook wheat with hen.Add the soaked wheat along with its reserved 500 ml soaking water, reduce to low heat and simmer for 60 minutes with the lid ajar. The grains swell and begin to soften, while the hen meat loosens from the bone. The chicken must reach 74 °C inside the thickest piece.

  4. Add the potatoes and carrot.Add all 600 g potatoes and 150 g carrot, then cook at a low simmer for 15 minutes. Potato edges are yielding but the pieces still hold together.

  5. Fry the red dressing. In a small frying pan heat 25 ml oil; cook 110 g spring onions, 15 g garlic and 45 g ají panca on low heat for 8 minutes, stirring. The aromatics soften and the chile paste smells rounded rather than raw.

  6. Finish with herbs.Stir the whole dressing into the pot; add 3 g oregano and 15 g parsley and simmer 7 minutes. The soup is lightly thickened by the wheat with distinguishable grains and tender meat.

Practical

Practical

Practical guidance

Serving. Portion chicken, softened wheat and potato deliberately rather than giving one bowl most of the solids. Advance preparation. The wheat can be soaked ahead under refrigeration; keep the poultry cold and prepare the dressing shortly before finishing. Storage. Cool promptly and refrigerate in shallow containers at 4 °C or below for 3–4 days; reheat portions to 74 °C. The wheat continues to absorb broth, so the texture becomes thicker. Substitution. Bone-in chicken pieces can replace older hen if necessary, but they cook more quickly and give a different broth; check doneness and adjust cooking time rather than assuming the hen schedule.

Control points

Control points

  • Wheat is still hardThe grain was insufficiently soaked or the simmer too short. Extend gentle cooking before adding delicate potatoes.
  • Potatoes fall apartThey were added too early or boiled vigorously. Add them after the wheat has softened and hold a light simmer.

Closing

Closing

  • Result: Llunca cashqui should be a spoonable, grain-rich soup with tender hen and potato.
  • Key control: Long wheat-and-hen simmering followed by a brief fried ají dressing defines the result.
