Emilia-Romagna Turismo describes the protected Ferrarese speciality as 00-flour-and-egg pasta filled with yellow pumpkin, Parmigiano Reggiano or Grana Padano, breadcrumbs, salt, pepper and nutmeg.
Roasting rather than boiling the pumpkin limits excess water, which is the main enemy of clean sealing and concentrated flavour.
The pasta is cut into squares, folded into triangles and the ends are joined to form the cappellaccio.
Butter, sage and Parmigiano keep the dressing restrained so the pumpkin filling remains the centre of the dish.
