Cake

Method

Build the light almond batter

  1. Prepare the mould. Heat the oven to 175°C. Grease and lightly dust the dome mould with semolina.

    The entire curved surface should release cleanly after baking.
  2. Whip yolks and sugar. Beat yolks with about two-thirds of the sugar and citrus zest until pale, thick and ribboning.

    The mixture should fall from the beaters in a slow ribbon.
  3. Whip the whites. Beat egg whites with salt, adding the remaining sugar gradually, until glossy medium-stiff peaks form.

    Peaks should stand but still look moist, not dry or grainy.

Fold and bake

  1. Fold the foams together. Fold one-third of the whites into the yolks, then gently fold in the remainder.

    The batter should remain visibly aerated.
  2. Add almonds and semolina. Sprinkle ground almonds and semolina over the foam in several additions and fold from the bottom upward.

    No dry pockets should remain, and the batter should still feel light.
  3. Bake the dome. Transfer immediately to the mould and bake 40–45 minutes.

    A skewer from the centre should emerge clean and the dome should spring back lightly.

Cool and glaze

  1. Unmould carefully. Rest 10 minutes, then turn the cake onto a rack and cool completely.

    The dome should hold without tearing.
  2. Melt the chocolate. Melt dark chocolate gently; stir in olive oil if using.

    The glaze should be fluid and glossy, never overheated or thick.
  3. Coat and set. Pour chocolate over the dome, guiding it down the sides, then leave 45–60 minutes to set.

    A thin continuous dark shell should cover the rounded cake.
