Method

Prepare the offal

  1. Rinse and inspect. Rinse the cleaned offal under cold running water, trim excess fat and cut into even pieces.

    Pieces should be clean-smelling and evenly sized.
  2. Blanch the tripe. Cover tripe with fresh water, bring to a boil for 5 minutes, then drain and rinse.

    The blanching water should be discarded.
  3. Dry before stewing. Drain thoroughly and pat the pieces dry.

    The pieces should not carry excess water into the oil.

Build the stew

  1. Soften the aromatics. Warm the olive oil and cook onion for 8 minutes; add garlic and chilli for the final minute.

    The onion should be soft without browning hard.
  2. Add offal and tomato. Stir in the offal, crushed tomatoes, oregano, pepper and enough water or stock to barely cover.

    The liquid should come to a gentle simmer.
  3. Simmer slowly. Cover partially and cook 1½–2 hours, stirring occasionally.

    The tripe should become tender rather than rubbery.

Reduce and serve

  1. Concentrate the sauce. Uncover and simmer 20–30 minutes until the sauce clings to the pieces.

    A spoonful should not release a watery pool.
  2. Season at the end. Taste and adjust salt, chilli and oregano.

    The flavour should be savoury, tomato-rich and clearly spicy.
  3. Fill the bread. Spoon the hot stew into split pitta or serve bread alongside.

    Bread should absorb some sauce while retaining structure.
