Regione Calabria describes the Pizzo tartufo as a handmade hazelnut ice cream shaped in the palm with melted chocolate at its centre.

A cocoa coating gives the finished tartufo its dark truffle-like exterior.

Method

Prepare the centre

  1. Make the chocolate filling. Heat cream until steaming, pour over chocolate, wait 1 minute and stir smooth.

    The ganache should be glossy and fluid.
  2. Portion the centres. Spoon six small mounds into a silicone mould or onto a lined tray.

    Each mound should be compact enough to enclose in gelato.
  3. Freeze until firm. Freeze the centres for at least 60 minutes.

    They should release cleanly and feel hard.

Shape the tartufi

  1. Soften gelato briefly. Let hazelnut gelato stand 5–8 minutes, just until scoopable.

    It should yield to a scoop without becoming runny.
  2. Enclose the centre. Flatten a generous portion in a gloved palm, place one frozen chocolate centre inside and close gelato around it.

    No chocolate should remain exposed.
  3. Form hemispheres. Shape each piece into a compact dome and place on the frozen tray.

    The surface should stay smooth enough to coat evenly.

Set and coat

  1. Freeze again. Freeze shaped tartufi for at least 3 hours.

    They should be completely firm before cocoa coating.
  2. Dust with cocoa. Roll or dust each frozen dome generously with cocoa.

    The exterior should be evenly dark and dry.
  3. Temper before serving. Rest 5–7 minutes in the refrigerator or a few minutes at cool room temperature.

    The gelato should soften slightly while the centre begins to melt.
