About Fileja alla ’nduja
Regione Calabria tourism identifies fileja as a characteristic local pasta and ’nduja as a foundational speciality of the Vibo Valentia area.
Fileja is shaped by rolling small pieces of semolina-and-water dough around a thin rod, producing a rough hollow spiral that traps sauce.
The ’nduja should melt gently into the sauce rather than fry hard, which can make chilli and pork fat taste harsh.
Tomato tempers the salume’s heat while Tropea onion contributes sweetness and Pecorino adds a salty finish.
