Kaczka pieczona z jabłkami: Polish roast duck with apples
Roast duck with sour apples and marjoram is a familiar Polish pairing, although local versions can be quite different. One documented Chojnowo Manor preparation uses old apple varieties, rests the seasoned bird in a cool place, adds water and wine during roasting, then surrounds it with apple halves near the end. This recipe borrows the broad flavour cues for a practical home roast; it is not presented as that exact regional recipe.
Duck has a rich flavour and renders a substantial amount of fat as it cooks. A rack keeps the bird above the pan juices, while carefully draining excess fat prevents smoking and helps the skin brown. Tart, firm apples hold their shape better than soft dessert apples. Marjoram gives the dish its recognisable Polish savoury aroma; garlic, salt and pepper support it without obscuring the fruit.
The duck is ready by temperature, not by appearance alone. Check the thickest breast and the innermost parts of both thigh and wing. Because an apple is cooked inside the cavity, check its centre too. The bird and the cavity apples must each reach at least 73.9 °C before serving.
