Pierogi z mięsem: Polish dumplings with cooked beef
Pierogi are Polish filled dumplings with a range of savoury and sweet fillings. Meat pierogi are commonly made with cooked beef, though chicken and different household combinations are also used. The registered Pierogi z mięsem pilzneńskie are a distinct Podkarpackie product; the official record links them to Pilzno and describes a historical filling made from leftover broth or roast meat, breadcrumbs, egg and onion. The broad name in this recipe does not claim that regional identity.
Cooking the beef first gives the filling a soft, cohesive texture and provides broth to moisten it. Mince the cooled meat finely rather than puréeing it; small pieces keep a pleasant texture inside the dumplings. Cook the diced onion slowly in butter until lightly golden, then combine it with the meat, breadcrumbs, marjoram and pepper. Add broth a little at a time—the filling should mound on a spoon without crumbling or releasing liquid.
The dough is deliberately supple and rests before rolling, which makes it easier to shape without springing back. Work with half at a time and keep the rest covered so the surface does not dry out. Seal each dumpling with clean, slightly damp fingers, pushing trapped air toward the open edge. Boil in small batches so the water keeps moving and the pierogi do not crowd or stick together.
