Grilled oscypek is a simple Podhale-style snack built around a distinctive smoked cheese and a spoonful of tart cranberry preserve. Its spindle-like shape, patterned surface and smoke-cured flavour are distinctive, but the protected name refers to cheese made to a defined origin and production specification. The EU registration sets the permitted area, a sheep’s-milk minimum, seasonal production and whole-cheese sale. This recipe uses the protected cheese as an ingredient; grilling it at home is a serving preparation, not a separate protected product category.

Grilling brings the smoked rind into direct contact with high heat, creating brown marks while the dense interior softens. Use slices about 1 cm thick so they warm through before the outside becomes too dark. A well-heated ridged pan or solid grill plate works more reliably than open grates. The cheese releases its own fat, so a dry cooking surface keeps the flavour clean and avoids excess smoke.

Cranberry preserve is a familiar sweet-tart accompaniment for grilled Oscypek.   1. Prepare the cheese and preserve.Keep the whole cheese chilled until ready to cook. Cut 8 slices about 1 cm thick and pat the cut surfaces dry with clean paper towel. Spoon 120 g cranberry preserve into a small serving bowl and set out four plates.

  2. Heat the cooking surface.Heat a clean grill plate or heavy ridged grill pan over high heat until thoroughly hot, about 230–260 °C at the cooking surface if measured. Do not oil it; the cheese releases fat as it heats. Arrange the slices so they do not touch.

  3. Grill the first side.Cook for about 2 minutes without moving the slices. When the underside has clear brown grill marks and releases with a thin spatula, turn each piece once. If it sticks, give it another 20–30 seconds rather than pulling it up.

  4. Finish the second side.Grill for about 2 minutes more, until browned and softened. Check one slice from the batch with a clean instant-read thermometer; the centre should be steaming hot and reach at least 74 °C. If needed, continue in 30-second intervals, turning once if the surface is darkening too quickly.

  5. Serve right away.Transfer the hot cheese to the plates with the spatula. Serve with cranberry preserve on the side, allowing about 30 g per person.
