Overview

Queso helado with coconut, cinnamon and milk

Although queso helado literally sounds like frozen cheese, the Arequipa dessert contains no cheese. Its name refers to the appearance of the milk mixture as it freezes in thin pale layers. Milk, coconut and cinnamon produce its characteristic flavour and a light, crystalline creaminess.

In Arequipa, traditional equipment can form layers against the sides of a cold container. This freezer-pan version is a practical home adaptation: spread the sweetened milk mixture in a shallow metal dish and scrape it periodically to interrupt large ice crystals.

Heating the milk with coconut and spices infuses it before freezing. There are recipes with egg yolks and recipes without them; this egg-free formula keeps the character of milk, coconut and cinnamon and avoids the need for a separate custard-temperature control.

Ingredients

Ingredients

Infused milk

  • 600 ml whole milk — pasteurised
  • 300 ml evaporated milk — unsweetened
  • 250 g sweetened condensed milk
  • 80 g dried shredded coconut — unsweetened
  • 2 g cinnamon sticks — about 1 short stick
  • 1 g whole cloves — about 3 cloves
  • 5 ml vanilla extract

Finish

  • 2 g ground cinnamon — for dusting

Method

  1. Infuse milk with coconut.Heat whole milk, evaporated milk, coconut, cinnamon stick and cloves in a heavy saucepan for 15 minutes over medium-low heat, stirring regularly. Steam rises gently and the milk smells of coconut and warm spices without a scorched aroma. Use pasteurised milk.

  2. Steep and strain the spices.Remove from heat, cover and leave to infuse for 15 minutes; strain into a clean bowl and discard solids. The strained milk is fragrant and free of whole spice pieces. Do not leave dairy out unnecessarily.

  3. Sweeten the milk base.Whisk in sweetened condensed milk and vanilla for 3 minutes until completely smooth. No dense ribbons of condensed milk remain.

  4. Chill the infused milk.Cool the mixture rapidly in a shallow covered dish in the refrigerator for 45 minutes, to below 4 °C. The base is distinctly cold before freezing. Refrigerate promptly and keep at or below 4 °C.

  5. Freeze and scrape crystals.Chill and freeze the mixture for 300 minutes; during the first 3 hours, scrape the edges inward every 45 minutes to break up crystals. The mixture holds delicate flaky ridges and is scoopable with a firm spoon. Keep frozen; do not leave on the counter between scrapings.

  6. Spoon and dust with cinnamon.Scrape into four dessert dishes and dust evenly with ground cinnamon just before serving. The flakes hold their shape briefly without becoming a solid icy slab. Refreeze promptly rather than repeatedly thawing and warming.

Success points

Infuse the milk first and repeatedly scrape the freezing mixture to control ice crystals.

Practical guidance

Queso helado means frozen milk dessert here, not cheesecake or cheese ice cream. Keep the Spanish name for identification and explain it rather than adding a cheese ingredient. Periodic scraping gives a different texture from a continuously churned ice cream and can be done in a standard home freezer. A shallow metal tray freezes more evenly than a deep bowl. Do not thaw and refreeze the full batch repeatedly. Portion only what you will serve, keep the remainder frozen, and use clean equipment when scraping the pan.

Control points

Control points

  • Large hard ice crystals formThe mixture froze undisturbed in a deep container. Use a shallow tray and scrape in the first three hours.
  • The dessert is too soft to portionIt has not spent long enough at freezer temperature. Allow the full freeze time before scraping and serving.
