How to Shape Crisp, Open-Centred Kaytaz Böreği
Kaytaz böreği is a Hatay pastry whose character comes from soft yeast dough, hand-built layers and a savoury meat centre sharpened by pomegranate molasses. It can appear square or round, but the supplied photographs show individual circular coils with the filling exposed. This version follows that visual form: sixteen small pastries, each with a crisp leafy rim and a shallow open middle.
The registered Hatay formula uses a remarkably soft dough. With 470 ml water for 600 g flour, it should feel tacky and supple rather than firm like bread. Kneading gives it enough strength to stretch, and a warm rise fills it with gas before layering begins. Dusting in extra handfuls of flour would make shaping easier but the baked centre heavy, so use lightly oiled hands and a clean smooth counter instead.
Layering happens one portion at a time. Stretch a rested piece into a thin disc with the melted butter-and-oil mixture, fold it into a strip, roll that strip into a coil and flatten the coil. The fat keeps surfaces from fusing completely, creating visible leaves in the oven. Press the middle lower than the rim, but never punch through to the tray or meat juices will escape underneath.
The filling is raw when it reaches the pastry. Lean ground beef is mixed with finely diced onion, tomato paste, pomegranate molasses, pul biber and black pepper. Onion must be cut extremely small so it softens in the short bake. The molasses should taste sharply fruity rather than like sweet grenadine. Mix only just before portioning; salt from the paste and the mechanical action of onion can draw liquid if the bowl waits too long.
A 220°C oven creates the necessary contrast. The rim expands and browns before the meat dries, while the thin filling reaches a safe 71°C. Bake on preheated heavy trays if possible and rotate once, because sixteen pieces can produce enough moisture to slow the oven. Rest five minutes on a rack, then serve warm. Kaytaz böreği travels well, but its crisp layered edges are most expressive during the first hour.
