Ontario Maple Baked Beans

Ontario maple baked beans pair white pea beans with Ontario maple syrup, chili sauce and bacon. This documented version begins with a brief boil and covered stand, then bakes slowly until the beans are tender and the sauce is thick.

Practical

Practical

  • Sort through the dried beans and discard stones or damaged beans.
  • Keep the beans moist during the long bake; add boiling water, not cold water, if needed.
  • Use pure maple syrup; pancake syrup is a different product.
Ingredients

Ingredients

Maple baked beans

  • Dry Ontario white pea beans — 500 g (about 500 mL)
  • Ontario maple syrup — 125 mL
  • Chili sauce — 125 mL
  • Small onion, chopped — 1
  • Salt — 10 mL
  • Dry mustard — 5 mL
  • Bacon, cut into 2.5 cm pieces — 3 slices
  • Boiling water, plus more if needed — about 500 mL
Directions

Directions

Method

  1. Step 1Sort and rinse the dry white pea beans. Cover generously with fresh water in a large saucepan and bring to a boil. Simmer for 2 minutes, remove from the heat, cover and let stand for 1 hour.

  2. Step 2Drain the beans. Heat the oven to 150°C and set out a covered 2 L ovenproof casserole or bean pot.

  3. Step 3In a small bowl, mix the maple syrup, chili sauce, chopped onion, salt and dry mustard.

  4. Step 4Spoon half the beans into the casserole. Scatter the bacon evenly over them, then cover with the remaining beans.

  5. Step 5Pour the maple mixture over the beans, then add about 500 mL boiling water. The liquid should reach through the beans without overflowing the dish.

  6. Step 6Cover and bake at 150°C for 6 to 7 hours, checking about once an hour. Add boiling water as needed to keep the beans moist. They are ready when fully tender and the sauce is thick; continue baking if needed.

  7. Step 7Serve hot as a side dish or over toast. Cool leftovers promptly in a clean shallow container, refrigerate within 2 hours at 4°C or colder, use within 2 to 3 days or freeze, and reheat to 74°C.

Serving

Plan ahead: the beans need a one-hour covered stand and a long oven bake. Cool leftovers promptly in a clean shallow container and refrigerate at 4°C or colder. Discard food left at room temperature for more than 2 hours. Eat refrigerated leftovers within 2 to 3 days or freeze them; reheat to 74°C. Check packaged bacon and chili sauce labels.

Control points

Control points

  • If the beans are still firm after 7 hours, add boiling water if needed and continue baking until tender; dried beans vary with age.
  • If the casserole looks dry before the beans soften, add boiling water a little at a time and keep it covered.
  • If the sauce is thin once the beans are tender, uncover for the final 15 minutes and watch that it does not dry out.

FAQ

FAQ

Can I use canned beans instead?

This long-bake version is measured for dried white pea beans. Canned beans soften much sooner, so they need a different bake time and less added salt.

Closing notes

Closing notes

  • The covered low oven lets maple sauce soak into the beans while bacon seasons the pot.
  • Serve warm beside ham or pork, or spoon onto toast with a crisp salad.
