How to Make Zeytinyağlı Yaprak Sarma
Zeytinyağlı yaprak sarma is the meatless olive-oil branch of Türkiye's broad wrapped-leaf tradition. Its rice filling is fragrant with slowly cooked onion, pine nuts, currants, parsley, dill, mint, allspice and cinnamon. It is served cool, glossy with olive oil and sharpened by lemon. Warm sarma containing minced meat is another valid form, but its seasoning, cooking and service are not silently mixed into this recipe.
Brined leaves must be tasted, not merely rinsed by the clock. Soak them in several changes of warm water until pleasantly salty and supple, blanching only if they remain tough. Remove hard stems and reserve torn leaves for lining the pot. For the filling, soften abundant onion and toast pine nuts gently, then add rice, currants and spices. Cook only partway; the grains need room and liquid to finish inside the rolls.
Cool the filling before rolling. Place a modest line near the stem end, fold in both sides and roll into a slim finger without squeezing tight. Rice expands, and overfilled leaves burst. Pack the rolls seam-side down in close concentric layers over the protective leaf lining. Lemon slices and a heatproof plate keep them submerged and stop the layers from opening as the pot simmers.
Add olive oil, lemon and hot water only to just below the plate, then cook very gently until the rice is tender and leaves cut easily. Let the sarma cool in the covered pot so the grains absorb the remaining seasoned liquid. Refrigerate promptly and serve cool with lemon. A good roll lifts intact, bends without toughness and tastes balanced between olive oil, herbs, mild sweetness and the leaf's pleasant tang.
