Antakya künefesi sandwiches a generous layer of unsalted melting cheese between fine strands of buttered tel kadayıf. The pastry is compressed into a shallow metal pan, cooked until both surfaces are deeply golden and then given syrup while hot. The target is a crisp shell, distinct threads and a molten, elastic centre—not a soft tray of soaked pastry.
