How to Make Antep Şiveydizi
Antep Şiveydizi is a protected Gaziantep dish whose identity lies in thick white sections of fresh garlic and spring onion, not in ordinary dried cloves added to generic lamb stew. Chickpeas and sheep meat give depth, while strained yogurt and egg turn the broth pale and gently tangy. Butter bloomed with dried mint provides the final aroma. The stew should remain smooth, with whole tender allium pieces clearly visible.
Soaked chickpeas and lamb need the longest cooking, so simmer them together and skim the broth until both are tender. The white garlic and onion lengths enter later. They should bend and yield but retain their shape; cooking them from the beginning would dissolve the vegetable that names the dish. Keep enough clear, flavourful broth for tempering rather than reducing the pot to a dry braise.
The yogurt liaison demands gradual temperature change. Whisk strained yogurt and egg completely smooth, then add hot broth in small amounts while whisking continuously. When the bowl is warm and fluid, return it to the pot in a thin stream over low heat. Stir until the stew reaches one gentle simmer and no further. A violent boil tightens the milk proteins and leaves visible curds.
Season only after the liaison, because yogurt and reduced broth change the balance. Foam the butter, add dried mint for a few seconds and pour it over the surface while still fragrant and green, not browned and bitter. Serve hot with rice or bread. Reheat leftovers gently while stirring to 74°C; hard boiling remains the enemy even on the second day.
