How to Make Smooth Turkish Red Lentil Soup
Mercimek çorbası is one of the most reassuring soups in Turkish cooking: economical, nourishing and quick enough for an ordinary evening. Red lentils soften and collapse, creating body without cream or flour. Onion, carrot and a restrained amount of potato round the flavour and texture, but the finished bowl should still taste unmistakably of lentil. A glossy red butter and fresh lemon bring contrast only at the moment of service.
Rinsing matters because red lentils carry fine surface starch and field dust. Wash them in several changes of cool water until the runoff is much less cloudy. There is no need to soak them. Cut the vegetables evenly and sweat them without browning, which keeps the soup golden-orange rather than muddy. Cumin is present in a small supporting amount; it should not turn the pot into a heavily spiced dhal.
Use unsalted stock only if it tastes clean and neutral. Water is entirely suitable because the pulse and vegetables make their own broth. Bring the pot to a simmer, skim any early foam and keep the lid slightly open. A hard boil can throw starch onto the rim and evaporate liquid before the carrot and potato are tender. After thirty minutes, every lentil should have lost its shape and each vegetable should crush instantly.
Blend only when the solids are fully tender. An immersion blender is convenient, but its bell must remain submerged to avoid hot splashes. With a countertop blender, work in small batches, remove the centre cap and cover the opening loosely with a folded towel so steam can escape. For the exceptionally fine texture associated with restaurant service, pass the blended soup through a medium sieve.
The correct consistency is thinner than lentil purée. It should pour in a broad ribbon and lightly coat a spoon, knowing it will thicken further as it stands. Add hot water after blending until that movement is restored, then season. Lemon belongs at the table; boiling it into the full pot dulls its aroma and can make leftovers taste harsh. Croutons and yogurt are optional and must be declared when served.
Paprika butter takes seconds. Let butter foam, remove it from direct heat, add sweet paprika and pul biber, and pour while vivid red and fragrant. Scorched spice is bitter and cannot be hidden in the soup. Refrigerated mercimek çorbası thickens considerably, so reheat it with water to 74°C and whisk it smooth before adding a fresh finish.
