How to Make Cohesive Turkish Mercimek Köftesi
Mercimek köftesi is called köfte because of its hand-shaped form, not because it contains meat. Red lentils, fine bulgur, onion, red pastes and herbs become a soft but cohesive mixture that records the pressure of the fingers. Served cool with crisp lettuce and lemon, it can be a meze, a substantial snack or part of a generous plant-based table.
The relationship between lentil water and bulgur is the critical calculation. Cook the lentils in measured water until they collapse but retain a small amount of thick liquid. Fine köftelik bulgur is then stirred directly into that hot pot and hydrated under a lid. Draining the lentils would remove the liquid needed by the grain; adding a large unmeasured splash later risks a wet mixture that never holds shape.
Use fine bulgur, not coarse pilaf bulgur. Fine grains soften with retained heat and participate in the cohesive body, while coarse grains remain conspicuous and crack the patties. After the covered rest, taste a pinch. There should be no hard white centre and no water at the bottom. If the grain remains firm, add only a spoonful of boiling water, cover again and wait before changing anything else.
The dressing is cooked separately. Soften finely chopped onion slowly in olive oil, then fry tomato and mild pepper pastes just long enough to remove their raw metallic edge. Cumin and pul biber bloom in the warm fat. Work this mixture through the lentil and bulgur while both are warm so the red colour distributes evenly. At this stage the mixture may seem softer than the finished patties; cooling and kneading will strengthen it.
Fresh parsley and spring onion go in only when the base is slightly warm. Added to a hot pot, they wilt, darken and lose the fresh contrast that defines the finished dish. Knead with clean hands until the mass is uniform and a squeezed portion keeps clear finger ridges. Lemon provides final brightness, but too much liquid at once can loosen the carefully balanced mixture.
Shape ovals directly onto dry lettuce leaves and serve extra lemon separately. The lettuce is a crisp wrapper or accompaniment, not bulk chopped into the bowl. Mercimek köftesi is naturally vegan and dairy-free, but bulgur is wheat and must be declared for gluten. Keep the patties chilled and store washed lettuce separately so condensation does not soften them.
