Šampita with puff pastry and a 118 °C hot-syrup meringue
Šampita is defined less by a dense cake crumb than by height: a thin base supports a deep white layer of whipped egg foam and sugar. A flat baked puff-pastry sheet sits beneath the meringue. The contrast is deliberate — brittle pastry below, smooth elastic foam above — so the base must be fully baked and the topping must hold enough structure to stand in a clean square.
The egg-white stage deserves unusually explicit safety language. The whites are a ready-to-eat component after assembly, so the recipe begins with pasteurized egg whites. A hot sugar syrup is still used because it provides the texture and stability associated with this style of foam, but glossy peaks are not treated as proof that raw shell-egg whites would have become safe. Pasteurized product is the starting control.
Syrup concentration is measured rather than guessed from bubble size or a spoon test. Sugar and water cook to 118 °C, within the range used for a firm Italian-meringue style foam. Lemon juice is added near the end. As the syrup approaches temperature, the whites are whipped only to soft peaks, leaving enough flexibility for the hot syrup to be incorporated without producing coarse, broken foam.
Pouring technique matters. The syrup travels in a thin steady stream down the inside wall of the mixer bowl while the whisk runs. Hitting the whisk wires throws syrup onto the bowl as hard threads instead of incorporating it smoothly. Once all syrup is in, whipping continues until the bowl is only slightly warm and the meringue holds deep ridges. That cooling period is part of structure, not empty mixer time.
The foam is spread immediately over a completely cool pastry base and chilled for the full setting period. Refrigeration at 4 °C or below keeps the egg-white dessert safely cold and gives the tall layer time to firm. A long clean knife, wiped between cuts, produces defined squares without dragging crust flakes through the white surface.
