Polish Homemade Meat Pâté (Pasztet domowy)
Pork, chicken and chicken liver are simmered with root vegetables, ground with softened bread and eggs, then baked in two shallow loaves. Chill the pâté thoroughly before slicing and serve it cold with bread, pickles or mustard.
Pasztet domowy is a broad name for Polish home-style pâté rather than one fixed formula. Polish culinary records include baked loaves made with pork and poultry, liver, bread and eggs. This version combines those familiar elements in a practical pork-and-chicken loaf; it is not presented as the only Polish recipe or as a protected regional formula.
The meat and vegetables are first simmered until tender, with the chicken liver added near the end and cooked through. The cooked ingredients are ground with a roll softened in reserved broth, then bound with eggs and seasoning. A moderate oven browns the surface while the inside sets.
The pâté is best made ahead because it needs prompt cooling and several hours in the refrigerator before it slices cleanly. Two shallow pans help it bake evenly and cool faster. Keep the finished loaves refrigerated; this cooked pâté is perishable and is not shelf-stable.
