About Scampi alla busara
Turismo FVG and Italia.it identify scampi alla busara as a characteristic Trieste/Istrian preparation based on fresh langoustines, tomato, garlic, white wine and a little chilli.
The shellfish provides much of the sauce’s flavour, so whole langoustines are cracked or split enough to let juices mingle with the tomato without fully shelling them.
The sauce is reduced first; langoustines go in only for the final minutes because their flesh toughens quickly.
The finished sauce should remain loose enough for bread or polenta, not cook down to a heavy pasta-style tomato ragù.
