Method

Soak and start separately

  1. Soak overnight. Cover chickpeas, beans and farro separately with plenty of cool water for about 12 hours.

    Each should be fully swollen before cooking.
  2. Rinse. Drain and rinse all three components under fresh water.

    Soaking water should be discarded.
  3. Start the chickpeas. Cover chickpeas with fresh water and simmer gently until nearly tender, about 90–120 minutes depending on age.

    A chickpea should crush between fingers but still hold shape.

Cook beans and grain

  1. Cook cannellini separately. Simmer beans in fresh water until tender, usually 60–90 minutes.

    Skins should be intact while centres are creamy.
  2. Cook the farro. Simmer farro until tender but chewy, roughly 35–50 minutes for pearled grain.

    Kernels should be cooked through without dissolving.
  3. Reserve cooking liquid. Keep some chickpea and bean cooking water for the final soup.

    The liquid should taste clean and lightly starchy.

Combine and season

  1. Mix the cooked components. Combine chickpeas, beans and farro in a large pot with enough reserved liquid to make a generous soup.

    The mixture should be thick but still clearly brothy.
  2. Simmer together. Cook 15 minutes so the flavours merge, adding hot water if too thick; season with salt.

    The pulses should stay distinct rather than collapse into purée.
  3. Serve simply. Ladle into bowls and finish each with extra-virgin olive oil and plenty of black pepper.

    The oil should perfume the surface and the legumes remain visible.
