Bánh ram ít Huế — steamed shrimp dumplings on crisp rice cakes
Bánh ram ít brings together two textures from one glutinous-rice dough: a filled dumpling steamed until soft and glossy, perched on a small disc fried until crisp. The combination is closely associated with Huế. Fresh or dried shrimp, scallion oil and crispy pork skin may appear as toppings; this version uses a shrimp-and-pork filling, scallion oil and optional dried-shrimp floss.
The contrast is the point: the gentle chew of the steamed bánh ít meets the crisp bánh ram base, with a bright lime-fish-sauce dip alongside. Fry the bases and steam the dumplings separately, then stack them at the last moment so the bottom stays crisp.
