Pierogi z ziemniakami i cebulą (kryzysówki): Polish potato and onion pierogi
These soft, boiled pierogi have a simple filling of grated potato cooked with onion. Each dumpling is folded into a half-moon and crimped by hand; a little fried onion and its oil make the spare, savory topping. The pale dough and light-brown filling follow the look recorded for the Lubelskie dish.
The Polish Ministry of Agriculture’s Traditional Products List registered Pierogi z ziemniakami i cebulą (kryzysówki) in 2021. Its entry describes the preparation associated with members of the Srebrne świerki senior club in Kułakowice Trzecie. The local oral-history account connects the dumplings with the preharvest period of food shortage and fasting days, when fried onion in vegetable oil was enough of a garnish. It describes semicircular, crimped pierogi about 7 cm long, with a soft cream wrapper and a light-brown potato filling flecked with onion.
The registry’s method cooks grated raw potato with softened onion until the filling becomes cohesive, then wraps it in a wheat dough made with egg yolk and hot water. This measured home version makes 36 pieces and keeps the documented fasting-style onion topping; it does not require pork cracklings or lard. Squeeze excess water from the grated potato and cook the filling all the way through before cooling and shaping.
