Karp smażony z sosem szarym: Wielkopolska Fried Carp with Gray Sauce
Karp smażony z sosem szarym is a Wielkopolska dish of carp steaks coated in flour and breadcrumbs, fried in butter, and served with a thick gray-brown sauce. The sauce is sweet-sour and smooth, with whole raisins and chopped almonds visible against its dark caramel color.
Poland's Ministry of Agriculture lists this preparation as a traditional product from Wielkopolskie, registered on 11 April 2013. Its description specifies carp steaks, a flour-and-breadcrumb coating, butter frying, and a sauce thickened with a browned butter-flour roux. Caramel, lemon, salt, red wine, raisins and almonds give the sauce its characteristic balance. The ministry also cites a 1937 manuscript recipe; older versions could use carp blood, while the more recent preparation uses red wine instead. This recipe follows the wine-based method and contains no blood. The regional listing associates the dish with Wielkopolska’s Wigilia table, while noting it is also served on ordinary days.
This measured home adaptation serves four. Fry the breaded carp until its crust is golden and the center reaches 63 °C for 15 seconds, then spoon the sauce over or alongside each piece so some crust stays crisp. Carp can contain fine bones, so eat carefully. The sauce contains dry red wine; cooking does not guarantee that all alcohol evaporates.
