Gałuszki – kluski po cieszyńsku (Cieszyn Silesian Potato Dumplings)
Introduction: Gałuszki are small potato dumplings from Cieszyn Silesia. The traditional-products listing describes them as round, light to gray, medium-soft dumplings with a recognizable potato aroma. This version uses a documented Istebna-style mixture of cooked and grated raw potatoes, spooned into small dumplings and served with crisp pork cracklings.
Cieszyn Silesian gałuszki have several names and methods, including strzapate, fusate and kulane. Some are formed by hand; others are dropped into boiling water by spoon. This recipe follows one published cooked-and-raw potato ratio rather than claiming a single formula for the whole region.
The Polish Ministry of Agriculture registered Gałuszki – kluski po cieszyńsku in the Silesian Voivodeship in 2011. The listing describes them as festive food served on their own or with meat. Here, rendered pork cracklings make a simple topping, as in a local Cieszyn Silesian preparation.
