Inchicapi de gallina loretano — step-by-step recipe

Inchicapi de gallina is a rich Amazonian soup in which peanut and maize thicken broth made with hen. The flavour is nutty and herbal, quite different from a clear chicken stock, and the bowl is substantial enough to stand as a meal.

Loreto is one of the Peruvian Amazon regions associated with inchicapi. Yuca is essential to the eating experience in this preparation; it must be completely cooked. Sacha culantro, the broad-leaf forest herb, gives a stronger aroma than ordinary coriander leaf.

The important control is the thickener. Grind clean peanuts finely, blend the maize flour into cold liquid, and incorporate the mixture slowly into the simmering stock while stirring. It should thicken evenly without hard lumps or a scorched bottom.

Ingredients

Ingredients

Ingredients

  • 1500 g bone-in gallina (mature hen), cut into six serving pieces
  • 220 g unsalted shelled peanuts, raw, clean and without mould
  • 105 g fine yellow maize flour, uncooked dry
  • 620 g cassava (yuca), peeled and core removed, thick chunks
  • 200 g squash or pumpkin, peeled and cubed
  • 150 g red onion, diced
  • 80 g mild Amazonian sweet pepper, seeded and chopped
  • 20 g garlic, crushed
  • 35 g sacha culantro, finely chopped
  • 3 g dried oregano, rubbed
  • 11 g fine salt, weighed
  • 2800 ml water, for soup and slurry

  1. Start the hen stock.Place the 1500 g hen with 200 g pumpkin and 2500 ml of the 2800 ml measured water in a large pot; bring to simmer, skim and cook for 90 minutes. The bird starts to loosen at the joints and the broth is fragrant. The thickest poultry pieces must reach 74 °C before serving.

  2. Prepare the peanut thickener.Grind 220 g raw clean peanuts into a fine paste, then blend with 105 g maize flour, 150 g onion, 80 g sweet pepper, 20 g garlic, 35 g sacha culantro and the reserved 300 ml cold water. The mixture is pourable, without dry flour pockets or large peanut pieces. Use peanuts without signs of mould; keep utensils for raw hen separate.

  3. Cook the yuca in broth.Add all 620 g de-cored yuca to the hen broth and simmer for 20 minutes. The cassava can be easily pierced and has no hard chalky middle. Cassava must be cooked completely; discard the woody core.

  4. Thicken with peanuts and maize.Stir the cold peanut-corn mixture into the gently simmering soup in a thin stream and cook for 15 minutes, stirring the bottom frequently. The soup thickens to a loose spoon-coating consistency, with no raw starch flavour. Peanuts and flour must be heated through and stirred to prevent scorching.

  5. Finish with oregano and salt.Add 3 g oregano and 11 g salt; stir and cook 5 more minutes. The broth is smooth enough to ladle yet holds small yuca and hen pieces.

  6. Portion thick soup.Divide the hen and yuca evenly among six bowls, then ladle the hot peanut-thickened soup over them. Every bowl has a whole hen serving and a thick but fluid broth. Warn diners about poultry bones.

Practical guidance

Serving. Keep the texture as a thick pourable soup, not a peanut paste; serve hot around the hen and yuca. Peanut selection. Use clean, good-quality peanuts with no damp, discoloured or mouldy smell; discard suspect nuts. Storage. Chill in shallow containers promptly at 4 °C or colder and use within 3–4 days; reheat to 74 °C, stirring because the maize thickener can catch. Ingredient boundary. Ordinary coriander leaf gives a milder herb note if sacha culantro is unavailable, and that substitution reduces the distinctive Amazonian aroma.

Contains peanuts and poultry. Peanut allergy is significant; chicken must reach 74 °C, and cassava must be cooked fully. Keep uncooked animal products away from food that is ready to serve. Wash utensils and hands after raw handling. Cool leftovers promptly in shallow containers, refrigerate at 4 °C or below within 2 hours, use within 3–4 days and reheat leftovers to 74 °C.
