  1. Cut and season. Keep the veal refrigerated at or below 4 °C until you are ready to prepare it. Cut into even 4 cm cubes and divide among six skewers. Salt all sides.

  2. Prepare the grill. Set the wine in a heatproof cup. Keep the sliced onion, clean platter and ready-to-eat utensils separate from raw veal and its board. Wait until the embers glow steadily without active flames.

  3. Start grilling. Lay the skewers over the settled embers. Turn them frequently so the cubes brown evenly on every side.

  4. Baste lightly. Grill for about 20–25 minutes. During the final minutes, brush on a little wine at a time; discard the remainder after it has touched raw-meat utensils. If dripping fat causes flames, move the skewers to a cooler part of the grill.

  5. Check and rest. Insert a food thermometer from the side into the center of the largest cube. Once it reaches at least 62.8 °C / 145 °F, transfer the skewers to a clean platter and rest 3 minutes. If it is below temperature, continue grilling and check again. Serve with the raw onion.
