Nazuki: Georgian Sweet Spiced Bread

Make soft, lightly spiced Georgian sweet bread with raisins, a glossy egg wash and a tender pull-apart crumb.

Nazuki is a sweet leavened bread associated with Kartli and festive tables in Georgia. It is often scented with warm spices and shaped as an oval loaf. Tone ovens are traditional, while a regular home oven makes a practical version.

This recipe uses a rich dough with milk, butter, eggs and raisins. Cinnamon and cloves give the bread a gentle fragrance without masking its buttery crumb. Three medium loaves are easier to shape and bake evenly than one large loaf.

Allow enough time for two rises, then brush the shaped loaves with egg yolk for their characteristic shine. Bake until deeply golden and cooked through; the exact proofing and baking time depends on room temperature, loaf size and oven.

Dough

  • 800 gall-purpose wheat flour
  • 300 mlwhole milk, lukewarm
  • 300 ggranulated sugar
  • 200 gunsalted butter, melted and cooled until warm
  • 2large eggs, at room temperature
  • 50 mlneutral sunflower oil
  • 20 gactive dry yeast
  • 200 graisins
  • 10 gvanilla powder
  • 2 gground cinnamon
  • 1 gground cloves
  • 4 gfine salt. Glaze: 2 egg yolks
  • 5 mlwater for the egg wash
Method

Method

  1. Wake the yeast. Stir the yeast and 1 tablespoon of the measured sugar into about 100 ml of the lukewarm milk. Leave for 10–15 minutes, until foamy. If it does not foam, replace the yeast before mixing the dough.

  2. Mix the dough. In a large bowl, whisk the eggs with the remaining sugar. Stir in the remaining milk, foamy yeast mixture, vanilla, cinnamon, cloves, salt and warm melted butter. Add the flour gradually and mix until a rough dough forms.

  3. Knead and enrich. Knead for 8–10 minutes by hand, adding the sunflower oil a little at a time, until smooth, elastic and only slightly tacky. Fold in the raisins until evenly distributed. Cover and leave in a warm, draft-free place until doubled, about 60 minutes.

  4. Shape and proof. Turn the dough onto a lightly oiled surface and divide into 3 equal portions. Shape each into a rounded oval loaf and place on two lined baking trays, leaving room to expand. Cover and proof until visibly puffy, about 25 minutes. Heat the oven to 180°C conventional.

  5. Glaze and bake. Beat the egg yolks with 1 teaspoon of water and brush a thin layer over the loaves. Bake for 30–35 minutes, rotating the trays once, until the crust is deep golden and the centres are set. If the crust colours too quickly, cover loosely with foil for the last few minutes.

  6. Cool before slicing. Transfer the loaves to wire racks and leave for at least 10 minutes before slicing. The crumb should be cooked through, not wet or doughy.

Serve warm or at room temperature with tea or coffee. For an even crumb, bring refrigerated eggs and milk to room temperature before mixing, and keep the dough covered during both rises so its surface does not dry out. Store fully cooled bread wrapped or in an airtight container at room temperature for up to 3 days. Freeze whole or sliced loaves, well wrapped, for up to 2 months; thaw at room temperature. Refrigeration can make bread stale faster.
