Megrelian kupati is a regional Georgian sausage associated with Samegrelo. Household recipes vary: some use a mixture of pork offal, pomegranate, savory, coriander, blue fenugreek and pepper, then gently fry the filled casing. This practical home version keeps that character while using butcher-cleaned casing and a cooked filling.

The filling combines pork lung, heart, liver and fatty belly. Each cut is cooked until tender before it is chopped and seasoned, then the stuffed links are gently browned in a covered pan. Ruby pomegranate and a little red-wine vinegar balance the richness. Serve hot, with ghomi on the side if you like.

This is fresh sausage, not a cured or shelf-stable product. Do not dry it at room temperature or store it unrefrigerated. Ask a reputable butcher for inspected offal and food-grade casing already cleaned and ready to fill.

  • 350 ginspected pork lungs, trimmed
  • 300 ginspected pork heart, trimmed of vessels
  • 250 ginspected pork liver, membrane removed
  • 300 ginspected pork belly, cut into large pieces

Seasoning

  • 100 gpomegranate arils, divided
  • 3 gdried savory, crumbled
  • 4 gground coriander (about 1½ tsp)
  • 2 gground blue fenugreek (about 1 tsp)
  • 1–2 gcrushed red pepper, to taste
  • 12 gfine salt
  • 20 mlred-wine vinegar, divided

Casing and cooking

  • About 1.2 m food-grade hog casing, butcher-cleaned and ready to fill
  • 15 mlneutral oil or rendered pork fat
  • about 2 L water for simmering

Method

  1. Prepare safely. Buy inspected pork offal and food-grade casing from a reputable butcher. Use casing professionally cleaned and ready to fill; do not clean it with household chemicals. Keep raw pork separate from ready-to-eat food. Wash hands and clean and sanitize tools and surfaces after handling raw offal.

  2. Cook the lung, heart and belly. Put the lung, heart and belly in a large saucepan and cover with fresh water. Bring to a boil, then lower to a gentle simmer. Skim as needed and simmer until tender; the lung and heart may take about 60–90 minutes, while belly may be ready sooner. Check the thickest pieces reach at least 71 °C. Remove each cut when tender and safe rather than leaving everything in for the same time.

  3. Cook the liver separately. Cover the liver with fresh water in a second saucepan. Bring to a gentle simmer and cook until the thickest piece reaches at least 71 °C, usually about 10–15 minutes depending on size. Drain all the cooked cuts well. Reserve up to 100 ml of hot cooking liquid; discard the rest safely.

  4. Chop and season. When cool enough to handle, finely chop all the cooked pork to a coarse, even texture. Stir in savory, coriander, blue fenugreek, crushed pepper, all the salt, 15 ml vinegar and 75 g pomegranate arils. Add a spoonful of reserved cooking liquid only if needed. Taste only after cooking and adjust the seasoning; the filling should hold together without being wet.

  5. Fill the casing. Rinse the prepared casing only if its supplier directs, then keep it moist. Fit it over a clean funnel or sausage stuffer. Fill loosely, avoiding air pockets and stretching. Twist or tie into six short links. Prick only visible air bubbles with a clean pin.

  6. Pan-fry gently. Warm the oil or pork fat in a heavy covered pan over medium-low heat. Add the sausages and 60 ml water. Cover and cook gently, turning once, until steaming hot and at least 71 °C in the center of the thickest link. Remove the lid and brown both sides lightly; avoid vigorous heat that could split the casing.

  7. Finish and serve. Transfer to a clean platter. Brush or spoon over the remaining vinegar and scatter the remaining pomegranate. Serve hot, with ghomi alongside if desired. Refrigerate leftovers within 2 hours at or below 4 °C; use within 3–4 days or freeze. Reheat leftovers to 74 °C. Do not air-dry or store this fresh sausage at room temperature.

Blue fenugreek, coriander and savory give the sausage its herbal Georgian character. Start with the lower amount of pepper if you prefer mild heat. Pomegranate brings sweet-tart bursts, while vinegar lifts the rich pork. Add the remaining vinegar at the end so you can keep the balance bright but not sharply sour.

Prepared casing is specialist food handling. Ask the butcher for casing that is already cleaned and ready to fill, and follow its storage instructions. If you cannot obtain it safely, cook the seasoned filling as patties rather than attempting to prepare raw casing at home.
