Arroz atollado de mujer is a flexible Guapi preparation from Colombia’s Pacific coast. The Colombian Ministry of Culture describes it as a staple of Guapi cooking, rooted in the toyo atollado but open to fish, seafood or meat. The regional inventory also describes the Guapi guiso as a creamy mixture of coconut cream or milk, water and refrito used to cook seafood, poultry and other meats.

This reproducible home version uses chicken thighs, one of the source’s broad meat options. It follows the proportions and moist, one-pot sequence of the documented toyo atollado, while extending the first simmer until the chicken is safely cooked. It is a chicken variation, not a claim that chicken is the sole or canonical form of arroz de mujer. Other proteins need their own appropriate cooking times and safety checks.

The chicken broth becomes the cooking liquid for the rice. Refrito coats the shredded meat and grains before the broth goes in; thick coconut milk finishes the pot slowly. Keep the texture spoonable and quite moist. Refrito salt varies, so the recipe starts without added salt and leaves the final seasoning to tasting.

  • 1 kg boneless skinless chicken thighs, raw and chilled
  • 1.66 L water, about 7 cups
  • 360 g white rice, about 2 cups, washed and drained
  • 240 ml thick unsweetened coconut milk, about 1 cup
  • 240 ml Colombian Pacific refrito, about 1 cup; salt and oil vary

  1. Prepare the chicken and rice Keep the chicken refrigerated until cooking. Wash the rice and drain it well. Keep raw poultry and its juices away from ready-to-eat food; wash hands, utensils and work surfaces after contact. Stir the coconut milk before measuring and taste the refrito to gauge its salt.

  2. Poach the chicken for broth Bring 1.66 L water to a boil in a wide, heavy pot. Add the chicken, return the water to a gentle simmer and cook for about 20 minutes. Check the thickest pieces with a food thermometer; every piece must reach at least 74°C. Lift the chicken onto a clean plate and reserve the broth.

  3. Shred and season the chicken When cool enough to handle, shred the chicken into bite-size pieces with two forks. Return the pot to medium heat and warm the refrito. Add the chicken and black pepper, then stir for about 1 minute until coated and fragrant. Do not add salt yet.

  4. Fry the rice briefly Add the washed, drained rice and stir it through the refrito and chicken for 5 minutes. This brief frying coats the grains and distributes the meat. Keep the reserved broth hot so the pot returns to a simmer quickly.

  5. Cook the rice in the chicken broth Pour in the hot broth and bring it to a steady simmer. Cook over medium heat for about 25 minutes, stirring periodically and scraping the base gently. The rice should soften while liquid remains. Lower the heat if the bottom begins to catch.

  6. Finish with coconut milk Stir in the thick coconut milk, lower the heat, cover and cook gently for about 15 minutes. Stir once or twice. The rice should be tender and quite moist, with chicken distributed throughout. Ensure the complete dish is steaming hot; taste and add salt only if needed.

  7. Rest briefly and serve Remove the pot from the heat and let it stand for 3 minutes. If the rice tightens, stir in a little hot water; atollado should remain spoonable. Serve hot in bowls and keep any food awaiting service hot rather than at room temperature.
