Saskatchewan Saskatoon Berry Pie

Saskatoon berry pie is a familiar Prairie dessert, especially in Saskatchewan, where the small purple berries are baked into a jammy filling beneath flaky pastry. This home-style version uses a buttery double crust and fresh or frozen Saskatoon berries. The berries bring their own sweet, gently almond-like character; a little lemon brightens the filling without hiding it. Serve a cooled slice plain or with vanilla ice cream or whipped cream.

Overview

Saskatchewan Saskatoon Berry Pie

Saskatoon berry pie is a Prairie classic with many household versions. Some cooks bake fresh or frozen berries directly in the pastry; others prepare and thicken the filling first. Lemon or almond flavouring, a full top crust or a lattice, and the amount of sugar also vary. This version bakes whole berries in a double crust and uses cornstarch to help the juices set as the pie cools. The berries stay the focus, with lemon for balance.

Practical

Practical

  • Keep the butter and water cold so the pastry bakes into flaky layers.
  • Add water gradually. Stop when the dough holds when squeezed; too much water makes it tough.
  • Keep frozen berries frozen when mixing the filling. Thawing can release extra juice before baking.
  • Bake on a preheated rimmed sheet to catch drips and help the bottom crust bake through.
  • The filling needs to bubble at the centre vents. A golden rim alone does not show that the starch has set.
  • Cool the pie for at least 90 minutes before slicing so the berry filling can thicken.
Ingredients

Ingredients

Pastry

  • 300 g all-purpose wheat flour
  • 10 g granulated sugar
  • 5 g fine salt
  • 200 g unsalted butter, very cold and cubed
  • Up to 90 mL ice-cold water, added gradually

  • 150 g granulated sugar
  • 35 g cornstarch
  • 30 mL lemon juice
  • 1 g fine salt
  • 20 g unsalted butter, cut into small pieces

Egg wash

  • 1 large egg
  • 15 mL water
  • 5 g coarse sugar, optional

Method

  1. Make the pastryWhisk the flour, 10 g sugar and 5 g salt in a large bowl. Cut in the cold butter until the mixture looks like coarse crumbs with visible pea-size pieces. Sprinkle in up to 90 mL ice water gradually, tossing as you go, until the dough holds together when pressed. Stop before it feels wet or sticky.

  2. Chill the doughDivide it into two portions, making one slightly larger for the base. Shape each into a flat disc, wrap and chill for 60 minutes. Keep the dough cold while preparing the filling.

  3. Heat the ovenSet a rack in the lower third and heat the oven to 220°C. Place a rimmed baking sheet on the rack to preheat and catch any drips.

  4. Prepare the berriesIf using fresh berries, rinse them under cool running water, drain well and remove stems or leaves. Keep frozen berries frozen. Mix the sugar, cornstarch and 1 g salt in a bowl. Add the berries and lemon juice and toss gently until coated.

  5. Fill the baseOn a lightly floured surface, roll the larger disc into a 30 cm round. Fit it into the 23 cm pie plate without stretching, leaving an overhang. Add the berries and any juice in the bowl, then dot with 20 g butter.

  6. Top and sealRoll the second disc and lay it over the filling, or cut it into strips for a lattice. Trim both crusts to about 2 cm beyond the rim, fold them together and crimp. If using a full top crust, cut several vents. Beat the egg with 15 mL water, brush a thin layer over the top and sprinkle with the optional coarse sugar.

  7. Bake and coolSet the pie on the hot baking sheet. Bake at 220°C for 15 minutes, then reduce the heat to 190°C and bake for 50–60 minutes more, until the pastry is deeply golden and thick filling bubbles through the centre vents. Loosely shield the rim with foil if it browns too quickly. Cool on a rack for at least 90 minutes before slicing.

Serving

Make ahead: Prepare the pastry up to 2 days ahead and refrigerate it, or freeze the wrapped discs for up to 2 months. You can also freeze the assembled unbaked pie. Bake it from frozen and allow extra time, checking that the filling bubbles through the centre vents.

Make-ahead

Storage and reheating: Cool the pie, cover it and refrigerate leftovers within 2 hours. Use within 3–4 days. Warm individual slices in a 160°C oven until heated through, or serve them chilled or at room temperature. Wrapped slices can be frozen for up to 2 months for best quality; thaw in the refrigerator.

Storage and reheating

Serving: Let the pie cool until the filling is set before cutting. Serve plain or with vanilla ice cream or whipped cream. A warm slice is especially good, but the pie also cuts neatly at room temperature.

FAQ

FAQ

Can I use frozen Saskatoon berries?

Yes. Add them to the filling while still frozen. They may need the longer end of the baking range before the centre bubbles.

Are Saskatoon berries the same as blueberries?

No. They are a different Prairie berry with their own mild, gently almond-like flavour. This pie is written for Saskatoon berries.

How do I know when the pie is ready?

The crust should be deeply golden and thick filling should bubble through the centre vents. Let it cool at least 90 minutes so the filling sets before slicing.
