Overview

Cháo gà — Vietnamese chicken rice porridge

Cháo gà is Vietnamese chicken rice porridge, built from rice simmered until the grains soften in a broth made from poached chicken. This version uses bone-in thighs and drumsticks for a flavorful broth and easy-to-shred meat, with a small amount of glutinous rice for body. It stays loose and spoonable, with grains still visible. Toppings such as scallion, herbs, fried shallot, pepper and lime bring freshness and texture. Household versions range from thinner to thicker.

Practical

Practical

  • Tips for successRinse and drain the rice well so excess surface starch does not make the porridge gluey. Keep the chicken broth at a gentle simmer; a hard boil can cloud it and break the rice down too quickly. Stir more often during the first 10 minutes after adding rice, when grains can settle on the pot bottom. Keep hot water nearby to thin the porridge to a loose, spoonable consistency. Keep crisp shallots, fresh herbs and lime separate until serving.
Ingredients

Ingredients

Chicken broth and meat

  • 1 kg bone-in, skin-on chicken thighs and drumsticks
  • 2.5 L water
  • 150 g yellow onion, peeled and halved
  • 40 g shallots, peeled and halved
  • 25 g fresh ginger, crushed into large pieces
  • 8 g fine salt
  • 5 g granulated sugar

Rice porridge

  • 200 g uncooked jasmine rice
  • 50 g uncooked glutinous rice
  • 15 ml neutral oil
  • 30 ml fish sauce, then adjust to taste
  • Hot water as needed to loosen the porridge

Toppings

  • 20 g fried shallots
  • 30 g scallions, thinly sliced; keep white and green parts separate
  • 15 g fresh cilantro, roughly chopped
  • 2 g ground black pepper
  • 1 lime, cut into wedges

Method

  1. Rinse the jasmine and glutinous rice together until the water is mostly clear. Drain thoroughly.

  2. Put the chicken, water, onion, shallots, ginger, salt and sugar in a large stockpot. Bring slowly to a gentle simmer, skim foam, partially cover and poach 30–40 minutes. Check the thickest pieces away from the bone; they must reach 74°C / 165°F.

  3. Move the cooked chicken to a clean plate and rest for 10 minutes. Strain the broth, discard the cooked aromatics and measure about 2.2 L; add hot water if needed. Shred the chicken, discarding bones and skin if desired. Keep raw-poultry tools separate and wash them.

  4. Heat the oil in a heavy skillet. Add the drained rice and toast over medium-low heat for 3–4 minutes, stirring, until fragrant but not browned. Stir in the white parts of the scallions for the final 30 seconds.

  5. Bring 2.2 L strained broth to a gentle boil in the stockpot. Stir in the toasted rice, reduce to a steady simmer and cook uncovered for 30–35 minutes. Stir more often during the first 10 minutes to prevent sticking. The grains should soften and open; add hot water if needed for a loose, spoonable texture.

  6. Stir in the shredded chicken and fish sauce. Simmer 2–3 minutes until the chicken is steaming hot throughout. Taste and adjust seasoning only if needed. Serve with scallion greens, cilantro, fried shallots, pepper and lime.

  7. Keep hot until serving. For leftovers, divide the porridge into shallow containers and cool rapidly, ideally within 1 hour. Refrigerate at or below 4°C / 40°F and use within 24 hours. Reheat only once until steaming hot throughout. Discard perishable food left at room temperature for more than 2 hours.

Practical guidance

Make ahead: Poach and shred the chicken a day ahead, then refrigerate it promptly. Prepare the rice porridge close to serving so the grains keep their texture. Serving: Add toppings at the table. A salt-pepper-lime dip for the chicken is an optional accompaniment and is not included in the measured recipe. Storage: Cool porridge quickly in shallow containers, ideally within 1 hour; refrigerate at or below 4°C / 40°F and use within 24 hours. Reheating: Reheat once until steaming hot throughout. Stir in hot water or broth as the rice thickens.

Troubleshooting

Porridge is too thick: Stir in hot water or broth a little at a time until spoonable. Rice sticks to the pot: Stir frequently in the first 10 minutes and lower the heat to a gentle simmer. Broth is cloudy: It may have boiled too hard; skim early and keep a gentle simmer next time. Chicken is not cooked through: Continue poaching and recheck the thickest pieces with a thermometer; reach 74°C / 165°F. Toppings lose their texture: Keep herbs, lime and fried shallots separate and add them just before eating.

Frequently asked questions

What is cháo gà? It is Vietnamese chicken rice porridge, cooked in chicken broth and served with shredded chicken and toppings. Can I use only jasmine rice? Yes. The small amount of glutinous rice here gives the porridge extra body; jasmine alone makes it lighter. Can I make it thicker? Simmer a little longer or use less broth next time. The porridge also thickens as it cools. Which herbs go on top? Scallion and cilantro work well; Vietnamese coriander (rau răm) is another documented option.

These rounded estimates assume a 60% edible yield from bone-in, skin-on chicken and use USDA raw thigh values as a reference. They include both rice types, oil, measured toppings and a representative fish-sauce value; optional dipping sauce is excluded. Chicken yield, skin eaten, broth fat and condiment brands change the result.
