Cá kho tộ miền Tây
Cá kho tộ is a Southern Vietnamese fish braise named for its clay-pot cooking or serving vessel. In this Mekong Delta-style version, thick freshwater catfish steaks take on a savory-sweet sauce made from fish sauce, coconut water and a small amount of freshly cooked caramel. Shallot, garlic and black pepper give the braise its aroma; chili is optional.
The sauce should reduce until it looks glossy and coats a spoon, while still leaving enough to season the rice. Bone-in steaks hold together well during the slow simmer. A wide, heavy lidded pan works if you do not have a clay pot, provided the fish fit in one layer.
Serve the fish as the centerpiece of a shared meal with plain jasmine rice, briefly blanched water spinach and cool cucumber. Family recipes vary in fish species, sweetness and seasoning, so this is one carefully measured home version rather than a claim that every cook makes it the same way.
