Hủ tiếu Nam Vang Sài Gòn
Hủ tiếu Nam Vang is a Saigon favourite whose name links it to Phnom Penh. Vietnam Tourism describes the broader hủ tiếu tradition as shaped by Chinese, Khmer and Vietnamese influences; bowls and toppings differ from shop to shop. This home version pairs chewy rice noodles with a clear pork-bone broth scented with dried shrimp and a little dried squid. Pork loin, minced pork, liver, shrimp and quail eggs make the bowl generous, while bean sprouts, lettuce, garlic chives, lime and fried garlic add freshness and crunch.
The broth needs a patient, low simmer rather than a hard boil. Blanching the bones first and skimming as the stock cooks help keep it clear. Cook the liver separately so it does not cloud the broth, and poach the pork loin gently so it stays sliceable. This is one practical Saigon-style recipe; it does not claim to represent every version.
