Overview

Bánh hỏi cháo lòng — Bình Định pork offal breakfast

Bánh hỏi cháo lòng brings together two parts of a Central Vietnamese breakfast: delicate, woven sheets of rice vermicelli and a bowl of cháo lòng, or pork-offal porridge. The bánh hỏi is dressed with warm chive oil so the fine strands stay soft and separate. A platter of cooked heart, liver, kidney and small intestine is served with the porridge, fresh greens and a lime-fish-sauce dip.

Offal assortments differ from vendor to vendor and family to family. This measured home version uses four cuts that are available from many butchers when ordered cleaned and ready to cook. The rice porridge is made from the strained cooking broth, while the bánh hỏi remains in its characteristic flat mats rather than being broken into ordinary loose noodles.

  • Tips for successBuy ready-cleaned offal and keep it cold until it goes into the pot. A thermometer, not color or a guessed cooking time, confirms safe cooking. Add the organs in sequence: the intestine needs the longest simmer, while liver cooks much faster. Dress the bánh hỏi while it is warm; the chive oil coats the rice strands more evenly.
Ingredients

Ingredients

Pork offal and broth

  • 700 g ready-cleaned pork offal: 200 g small intestine, 200 g heart, 150 g liver and 150 g kidney; keep refrigerated

  • 30 g fresh ginger, sliced

  • 100 g jasmine rice, rinsed, drained and toasted
  • 40 ml fish sauce total: 10 ml for the porridge and 30 ml for the dip

Method

  1. Keep the ready-cleaned offal refrigerated until cooking. Use a separate board and knife for raw offal; wash your hands and clean the work area after contact. Bring 2.2 L water, the ginger and shallots to a boil in a large pot, then lower to a steady simmer.

  2. Add the small intestine first and simmer about 40–50 minutes until tender and its thickest part reaches 71°C / 160°F. After 20 minutes, add the heart; after 30 minutes, add the kidney; after 38 minutes, add the liver. Check every organ at its thickest point and remove it only after it reaches 71°C / 160°F. Times vary with thickness, so continue cooking any piece that has not reached temperature.

  3. Transfer the cooked offal to a clean covered plate and rest for 5 minutes. Strain the broth into a clean pot, discard the cooked aromatics, measure 1.5 L broth and top up with hot water from the measured amount if needed. Toast the rinsed rice in a dry saucepan for 2–3 minutes, add the broth and simmer gently for 40–45 minutes, stirring occasionally, until the rice breaks down and the porridge is loose and spoonable. Season with 10 ml fish sauce, 1 g salt and black pepper.

  4. Prepare the dried bánh hỏi according to its package. If the label gives no directions, cook the sheets gently in boiling water for about 2–3 minutes until tender but still distinct, briefly rinse with warm water, drain well and lift into four flat mats. Do not substitute loose rice vermicelli if you want the characteristic woven sheets.

  5. For the chive oil, put the sliced garlic chives and 1 g salt in a heatproof bowl. Heat 45 ml neutral oil in a small skillet until shimmering but not smoking, then pour it over the chives. Stir and spoon the warm oil over the bánh hỏi mats.

  6. Stir the dipping sauce until the sugar dissolves: combine 30 ml fish sauce, 30 ml lime juice, 90 ml water, 25 g sugar, minced garlic and sliced chilli. Slice the rested offal on the clean board. Serve each plate with bánh hỏi, a bowl of porridge, a quarter of the assorted offal, lettuce and herbs, cucumber and dipping sauce.

Practical guidance

Use ready-cleaned pork organs from a reputable butcher and keep them refrigerated. Do not wash raw offal in the sink; it can spread raw juices around the kitchen. Salt, lime, vinegar, ginger or rice wine may be used for flavor in other recipes, but they do not replace safe cooking. Clean and sanitize any surface that touches raw offal. Refrigerate cooked offal and porridge in separate covered shallow containers at or below 4°C / 40°F within 2 hours. Use within 2 days. Reheat leftovers until steaming hot and 74°C / 165°F throughout. Prepare the fresh herbs and bánh hỏi close to serving.

Troubleshooting

The offal is still firm after it reaches temperature: continue simmering until tender, checking that it remains covered by broth; safe temperature is the minimum control, while texture may take longer. The bánh hỏi mats stick together: they may be overcooked, rinsed cold or stacked while wet. Follow the package, rinse briefly with warm water, drain well and brush with chive oil while still warm.

Frequently asked questions

Can I use ordinary rice vermicelli instead of bánh hỏi? It will be edible with the same accompaniments, but it will not have the characteristic fine woven rice sheets. Use dried bánh hỏi when fresh mats are unavailable. Why cook the organs in stages? Intestine and heart take longer than liver. Staggering them helps keep the faster-cooking cuts tender; still check every cut with a thermometer.
