Xôi vùng cao — Hà Giang five-colour sticky rice
Xôi vùng cao is the workbook’s descriptive name for a Hà Giang highland sticky-rice variant, rather than a single historically fixed recipe title. Five-colour sticky rice is prepared in several northern mountain communities, where rice varieties, dye plants, methods and meanings differ. This measured home version uses red gấc, yellow turmeric, green pandan, purple magenta leaves and a naturally white portion. It is inspired by commonly documented plant-dyed versions; it does not claim to reproduce the exact Tày method reported in Thanh Sơn village, Hà Giang.
The grains are divided before soaking so each colour stays distinct. Cool the dye baths before they touch the rice, refrigerate the covered bowls overnight, then steam the colours separately. Some communities connect the five colours with the five elements, but the meanings and colour mappings vary. The finished rice is naturally sticky and fragrant, with a soft chew and no need for added sugar or coconut milk.
