Bánh đa cua Hải Phòng: Hai Phong Crab Soup with Red Rice Noodles
Bánh đa cua Hải Phòng is a port-city noodle soup built around wide, reddish-brown rice noodles and freshwater field-crab broth. The cooked crab proteins gather into soft curds, while tomato, a little tamarind and fermented shrimp paste give the broth its savory, gently sour character. Chả lá lốt—seasoned pork wrapped in fragrant lolot leaves—adds a smoky, peppery bite. Water spinach, fried shallots and crisp pork cracklings complete this home version.
The noodles get their distinctive color from the local bánh đa-making tradition; makers use different ingredients and methods, so shades vary. Choose dried Hải Phòng-style red rice noodles when available and follow their package directions because thickness and pre-cooking vary. This recipe keeps the broth crab-forward. Shrimp, mantis shrimp, fish cake, rau rút and pork-bone broth appear in other bowls but are not required here.
Preparing live field crabs takes time, but it makes both the broth and the delicate crab curd. The crab is cleaned, pounded or processed with salt, then strained repeatedly with water. As the liquid heats gently, the crab proteins rise and set. Keep the heat modest once the curd forms so it stays in soft clusters rather than breaking apart.
