Chả mực Hạ Long: Hand-Pounded Squid Cakes
Chả mực Hạ Long is a Quảng Ninh specialty made from fresh squid or cuttlefish, hand-pounded into a coarse, cohesive paste, shaped into small cakes and fried until golden. The traditional pounding leaves the mixture with more texture than a completely smooth puree. A little pork belly and aromatics can enrich a home version; some producers also use a small amount of glutinous rice flour to help the cakes bind. Recipes and accompaniments vary, so this version keeps the squid in the lead and treats the flour as a modest supporting ingredient.
The squid must be thoroughly dried before pounding. Excess moisture makes the paste slack and can cause the cakes to spread or turn soft in the oil. Chilling the seasoned mixture firms it for shaping, while controlled frying cooks the centre before the outside darkens. Serve the cakes with bún, cucumber, lettuce, herbs and a bright fish-sauce dip. Sticky rice, steamed rice and bánh cuốn are also common pairings.
