Salade niçoise is often expanded far beyond its Nice identity, especially with cooked potatoes and green beans. The form here stays close to the Cuisine Nissarde technical-committee preparation: mesclun, ripe tomato, spring onion, celery heart, small purple artichoke, green pepper, radish and seasonal broad beans remain raw and distinct. Tuna, anchovy, Olives de Nice, egg, basil and olive oil provide the savoury finish. There is no cooked potato or green bean in the main ingredient list.

Composition matters as much as the ingredient list. A broad platter is rubbed with garlic and lined with mesclun; tomatoes go down first and the other raw vegetables are arranged over them in identifiable layers. The salad is not vigorously tossed. This flat arrangement keeps delicate slices intact and makes it easier to ensure every serving receives the full range of vegetables. Tuna stays in large flakes rather than being mashed into the dressing, while anchovy fillets, olives and egg quarters remain visible.

Only the eggs are cooked, for eight minutes, until set enough to quarter cleanly and at least 71 °C at the centre. All other produce is washed, dried and kept cold.   1. Hard-cook the eggs. Cook the eggs in simmering water for 8 minutes, then cool just enough to handle, peel and quarter. The whites should be fully set and the yolks set enough to quarter cleanly, with the centre reaching at least 71 °C.

Prepare the raw vegetables

  1. Prepare the vegetables cleanly. Wash and thoroughly dry the produce, then cut the tomatoes into wedges and slice the spring onions, celery, raw artichoke hearts and green peppers thinly; prepare the radishes and broad beans. The vegetables should remain crisp, visibly separate and free of excess surface water.

Compose the platter

  1. Build the vegetable base without tossing. Rub a wide platter with the cut garlic, spread over the mesclun, then arrange the tomatoes and remaining raw vegetables in distinct areas rather than tossing them together. The tomatoes and vegetables should remain identifiable in a flat, orderly arrangement rather than becoming a mixed salad.

  2. Finish with fish, eggs, olives and oil. Place the tuna in large flakes over the vegetables, distribute the anchovies, Olives de Nice and egg quarters, add the basil, then drizzle with all the olive oil and season with the salt and pepper. Every quarter of the platter should receive fish, egg, olives, vegetables and a visible sheen of olive oil.
