Bún mắm (Mekong Delta fermented-fish noodle soup)
Bún mắm is a Southern Vietnamese noodle soup named for its defining broth, which is made with mắm: fermented fish paste. Mắm cá linh and mắm cá sặc are two types used in Mekong Delta cooking. They are different from clear bottled fish sauce. Simmering and straining the paste creates a dark, savory broth with a strong aroma, balanced here with pork, dried shrimp, lemongrass, pineapple and a little sugar.
This home-style bowl brings together rice vermicelli, pork belly, shrimp, squid and eggplant, with raw herbs and crunchy vegetables served alongside. Other versions may include fish, fish cake, different vegetables or other seafood. Fermented fish paste varies considerably in saltiness, so taste the broth before adding any extra salty seasoning. Straining it carefully also removes coarse solids and small bones.
