Poderane gaće: slit yeasted fried dough with a light, cooked-through centre
The memorable name poderane gaće belongs to a family of fried doughs whose appearance matters as much as their ingredient list. A soft yeasted dough is rolled into rectangles and each piece receives an open slit through the centre. The cut gives the pastry its recognizable torn look and also exposes more edge to the oil, helping the relatively broad piece cook evenly without becoming a thick, doughnut-like pad.
Recipes under the same name are not uniform. Some use yogurt and baking powder for a quick dough; others are leaner or richer; many regional relatives are called mekike, langošice or other local names. The yeast-raised rectangular form makes the slit distinct and gives a light crumb after two rises. The pastry is therefore best understood through its technique rather than as a universal household formula.
Milk and yogurt provide enough tenderness for the fried bread to stay soft after the first crisp bite. The dough should not be made stiff in an attempt to make it easier to handle. A soft dough stretches more readily and can inflate around the slit. The first proof gives the bulk of the volume, while the 20-minute rest after cutting restores some of the gas lost to the rolling pin and knife.
The central cut should go fully through the dough but stop well before either end. That keeps the rectangle in one piece while allowing the middle to open in the oil. There is no need to twist the dough into an elaborate shape; the simple slit is sufficient. Once shaped, the pieces are kept covered so a dry skin does not form — a skin would restrict expansion and can make the edges tough.
Deep frying needs a measured oil temperature. If the oil is much hotter than 175 °C, the outside can become dark while the thickest dough remains raw; if it falls too low, the pieces spend longer absorbing fat. The first piece should be torn through its thickest area after draining. A dry, bread-like interior confirms doneness, while a glossy paste or compressed raw line means the oil or thickness needs correction before the next batch.
