Piernik staropolski: Old-Polish Honey Gingerbread with Plum Butter
Piernik staropolski is not a single fixed formula. Documented household versions combine honey, wheat and rye flour, eggs, butter and warming spices; some add cocoa, dried fruit or nuts. A number of methods allow the raw dough to mature for weeks and then let baked sheets soften before serving, but the dough composition and timing differ.
This recipe turns the dough into three thin sheets baked separately. Thick plum butter holds the layers together, while chocolate ganache finishes the top. Candied orange and walnuts echo fruit-and-spice combinations found in family recipes. The 48-hour dough rest is kept refrigerated, and the assembled cream-topped cake is chilled until the layers soften.
The registered Piernik staropolski z Powiśla is a distinct regional cake with its own layered-sheet and preserve tradition. This home version is not presented as that local product. Cut it into small portions because honey, butter, plum filling and chocolate make it a rich dessert.
