Ocopa arequipeña — potatoes with huacatay sauce
Ocopa arequipeña is an Arequipa potato dish recognised for its herb-scented, nutty sauce. Unlike a generic cheese sauce, ocopa includes huacatay and ají with peanuts and an edible thickener such as biscuit or cracker. The creamy topping is spooned over boiled potatoes rather than baked with them.
Huacatay has a distinctive deep herbal flavour, and toasted peanuts contribute body. Dried ají mirasol needs softening and brief cooking to tame its harsh raw character. Milk and fresh cheese make the sauce mellow, while crushed crackers keep it from running off the potatoes.
This plate is generally presented as a starter. Allow the sautéed chilli and onion to cool slightly before blending with dairy and herbs, then serve over cooled or warm potatoes with pieces of egg and olives. The sauce should pour slowly from a spoon, not stand like a stiff paste.
