Fried Clams (Atlantic Canadian battered clams)

This Maritime coastal favourite keeps fresh clams at the centre: a light cornmeal coating turns crisp around tender clam meat, with a little buttermilk tang and lemon to finish. New Brunswick tourism guides feature battered fried clams among the region's seafood experiences. Coastal households and fry shops vary their coatings, so this is one practical home version rather than a single canonical formula.

Overview

Fried Clams (Atlantic Canadian battered clams)

A short chilled buttermilk rest helps the coating cling. Fry in uncrowded batches so the oil stays hot, and follow the shellfish safety method: maintain 190°C oil and fry each batch for at least 3 minutes. Serve as soon as the coating is crisp.

  • Keep raw clams below 4°C until they are ready for coating; dry them well so the coating adheres.
  • Hold the frying oil at 190°C and cook each small batch for at least 3 minutes, turning once.

  • 5 g baking powder
  • 2 g fine salt

Method

  1. Step 1Keep the clams refrigerated below 4°C while setting up. Drain them in a colander, pat dry with paper towels and place in a clean bowl with the buttermilk. Cover and chill for 15 minutes. Keep raw-clam tools and the bowl separate from clean serving equipment.

  2. Step 2In a shallow dish, whisk the flour, cornmeal, baking powder, salt, pepper and paprika. Set a wire rack over a tray beside the stove. Lift a handful of clams from the buttermilk, let excess drip off and toss them in the coating until lightly covered. Shake off loose excess and place on the rack. Repeat in small batches, keeping the remaining clams cold.

  3. Step 3Pour the oil into a deep heavy pot to a safe depth, leaving ample headroom, or follow the fryer’s fill line. Heat to 190°C and check with a thermometer. Never leave hot oil unattended; keep water away from it.

  4. Step 4Fry clams in small batches without crowding for at least 3 minutes, turning once, until the coating is crisp and golden. Keep the oil at 190°C between batches. Transfer with a clean spider to the wire rack; do not reuse a plate or utensils that held raw clams.

  5. Step 5Let the oil return to 190°C before the next batch. Serve the clams immediately with lemon wedges and clean utensils.
