Bánh canh cá lóc Huế — Huế snakehead fish noodle soup
Bánh canh cá lóc Huế pairs thick, pleasantly chewy noodles with snakehead fillet that is seasoned and gently braised until firm. Huế shops differ in their noodle flours, broth bases and seasonings: rice flour, tapioca starch or blends may be used, and some broths combine fish bones with pork bones. This home version uses fresh rice-and-tapioca noodles, a strained pork-and-fish stock, turmeric-colored fish and a measured amount of mắm ruốc. It is one style-informed bowl, not a single fixed Huế formula.
The fish is cooked separately so the pieces stay intact and flavorful. The noodles are also cooked in their own pot; this keeps the broth clean and prevents it from becoming overly thick. Rau răm, scallions and cilantro bring a fresh finish, while lime and chili let each person adjust the bowl.
