Xôi vùng cao — Điện Biên (xôi hoa bó phón)
Xôi vùng cao means “highland sticky rice” and is a broad name, not one historically fixed recipe. This version is xôi hoa bó phón, golden flower-infused sticky rice from Nậm Pồ district in Điện Biên. The dish is associated with Hmong, Dao and Thái households in Nậm Pồ; Điện Biên also has other plain and colored xôi styles. It is one local preparation, and families and communities may cook xôi in different ways.
The flowers are simmered briefly to make a golden infusion. After it is strained and cooled, the infusion flavors the glutinous rice during its soak before steaming. A covered basket and steady steam keep the grains plump and tender; the flowers add color and a mild aroma. The flower’s botanical identity is not precisely established, so use only dried bó phón sold as a food ingredient by a reliable supplier. Do not forage unidentified wild flowers.
