How to prepare Home-style Lima ceviche with a light garlic dressing

The defining flavours of Peruvian fish ceviche remain recognizable in a modest household serving: firm fish, sharp lime, fragrant ají and crisp red onion. This Lima home-style interpretation uses a small amount of grated garlic and a little less dressing than a saucier restaurant plate; it is not an independently named historic style.

The fish is cut into manageable cubes for a family table, while the cooked camote and corn can be prepared first. The sauce develops from the fish juices, lime and salt when the bowl is tossed; a blender or separate concentrated stock is not needed. Grating the garlic very finely prevents a raw harsh chunk in an otherwise delicate mouthful.

Serve the fish once the seasoning is balanced and the pieces are still firm. A lengthy soak is unnecessary and not a valid safety step. The critical household habit is to hold the fish cold and avoid cross-contact between raw fish utensils and the cooked accompaniments.

Ingredients

Ingredients

Sides

  • 320 g sweet potato (camote), peeled and cut into chunks
  • 280 g choclo kernels, fresh or frozen, unseasoned
  • 1200 ml water, for boiling

Fish and dressing

  • 600 g firm white fish for raw serving, boneless and chilled
  • 115 ml fresh lime juice, strained
  • 155 g red onion, thin plumes
  • 10 g ají limo, finely diced
  • 8 g cilantro, chopped
  • 4 g garlic, very finely grated
  • 5 g fine salt

  1. Boil the side vegetables.Add 320 g sweet potato and 280 g choclo to a saucepan with 1200 ml water. Simmer for 25 minutes, removing either ingredient sooner if already tender. A fork passes through the camote easily and the choclo kernels have softened.

  2. Vent the steam.Drain and spread the vegetables in a shallow dish for 5 minutes so they stop steaming before serving. Steam no longer rises from the sweet potato.

  3. Prepare the aromatics. On a clean board cut the 155 g red onion into fine plumes; chop 10 g ají and 8 g cilantro, and grate 4 g garlic until it has no coarse pieces. The garlic is a fine paste and the onion remains crisp.

  4. Cube the chilled fish.On a different clean board cut the 600 g cold fish into regular 2 cm cubes and transfer to a chilled bowl with 5 g salt, ají and garlic. The fish pieces have clean, firm edges. Use raw-fish handling precautions and refrigerate any fish not being assembled.

  5. Toss and plate.Add 115 ml fresh lime juice, the prepared onion and cilantro. Fold gently, distribute between four bowls and place the cooled camote and choclo at the side. The lime dressing coats the fish lightly without breaking the pieces. Eat at once while well chilled; acid is not a substitute for cooking.

Practical guidance

For a family lunch, leave the cooked sides ready in four separate bowls. The smaller volume of lime juice helps the vegetables and fish stay distinct rather than turning the plate into a soup. The garlic should be almost a paste, because large chunks would stand out sharply against fresh fish. If cooked sides are made earlier, cool them quickly in shallow containers and refrigerate. Reheat the sides separately if desired, then let them stop steaming before plating the uncooked fish. Do not reheat or save the finished ceviche as a planned leftover dish. When the onion is exceptionally pungent, cut it more finely rather than increasing the lime volume. A little garlic is enough: the main flavour still comes from fish, ají and lime. No additional fish stock or bottled dressing is required.
