  • 1/2 red onion, thinly sliced

  • 1 cup (150g) cherry tomatoes, halved

  • 1/4 cup (35g) black olives, sliced

  • 2 tbsp (30ml) olive oil

  • 1 tsp (5g) dried oregano

  • Fresh basil leaves for garnish

  • Salt and pepper to taste

Directions

  • Prepare the dough
  • In a large bowl, mix flour, yeast, sugar, and salt.
  • Add olive oil and warm water, mix until a shaggy dough forms.
  • Knead for 8-10 minutes until smooth and elastic.
  • Place in a greased bowl, cover, and let rise for 1-2 hours until doubled in size.
  • Preheat the oven
  • Preheat the oven to 450°F (230°C). If using a pizza stone, place it in the oven while preheating.
  • Prepare the toppings
  • Slice all vegetables as directed.
  • Mix sliced vegetables (except cherry tomatoes) with 1 tbsp olive oil, salt, and pepper.
  • Shape the pizza
  • Punch down the dough and divide into two portions.
  • On a floured surface, roll each portion into a 12-inch circle.

  • Spread tomato sauce over each dough circle, leaving a small border.
