Overview

Bánh hỏi lòng heo Phú Yên — fine rice threads with pork and offal

Bánh hỏi are very fine rice threads pressed into delicate sheets. In Phú Yên, they are served with pork and a platter of offal, fresh greens and a seasoned fish-sauce dip. The strands are often finished with fragrant chives and oil; the pork may include belly, liver and small intestine. This home version adds heart to the assortment and uses fresh, commercially prepared bánh hỏi so the focus stays on the regional combination rather than a laborious rice-dough process. Offal selections vary by cook and market.

The key is contrast: soft, warm rice threads, tender pork, neatly sliced offal, bright herbs and a salty-sour-sweet dip. Ask a trusted butcher for ready-cleaned offal and keep it chilled. Use a thermometer for the pork and each organ cut; cooking time alone cannot confirm a safe centre temperature.

Practical

Practical

  • Keys to successBuy fresh bánh hỏi and warm it exactly as the package directs; keep covered until serving. Use ready-cleaned pork offal and avoid rinsing raw meat in the sink, which can splash contamination. Cook pork belly to 63°C / 145°F and rest it for at least 3 minutes. Cook liver, heart and intestine to 71°C / 160°F in the thickest part. Cool cooked cuts briefly in a clean ice bath only if needed to firm them, then serve or refrigerate promptly.
Ingredients

Ingredients

Pork and offal platter

  • 300 g boneless pork belly, one piece about 4 cm thick
  • 200 g ready-cleaned pork liver
  • 200 g ready-cleaned pork heart, halved lengthwise
  • 200 g ready-cleaned pork small intestine
  • 4 L water, divided between the two pots; extra for the ice bath
  • 60 g fresh ginger, sliced
  • 2 lemongrass stalks, bruised
  • 5 g fine salt, divided

Bánh hỏi

  • 600 g fresh, commercially prepared bánh hỏi rice-thread sheets

Chive oil

  • 30 ml coconut oil
  • 40 g Vietnamese garlic chives (hẹ), finely sliced

Dipping sauce

  • 45 ml fish sauce
  • 90 ml warm water
  • 25 g sugar
  • 30 ml lime juice
  • 8 g garlic, finely minced
  • 1 small red chili, finely minced (optional)

Fresh accompaniments

  • 150 g lettuce and mixed fresh herbs
  • 200 g cucumber, sliced
  • 150 g edible portion of firm green banana, peeled and thinly sliced just before serving
  • 1 lime, cut into extra wedges

Method

  1. Keep raw pork and offal refrigerated until cooking. Use commercially cleaned offal; do not rinse raw pork in the sink. Wash hands and clean the board, knife and work area after raw-meat contact. Prepare a clean bowl of ice water for the cooked cuts.

  2. Put the pork belly in one pot with 2 L water, 30 g ginger, 1 lemongrass stalk and 2 g salt. Bring to a boil, lower to a steady simmer and cook, turning once if needed, until the centre reaches at least 63°C / 145°F. Remove from the heat and rest for at least 3 minutes before slicing. Simmer longer if you prefer a softer texture; temperature, not a fixed time, is the safety check.

  3. In the second pot, bring the remaining 2 L water, ginger, lemongrass and 3 g salt to a boil. Add heart and intestine, reduce to a simmer and cook until the thickest part of each reaches 71°C / 160°F and is tender. Add the liver later so it does not overcook; cook its thickest part to 71°C / 160°F. Check each cut with a clean thermometer. Cooking times vary with size and starting temperature.

  4. With clean tongs, transfer cooked cuts to the prepared ice bath for about 5 minutes to stop carryover cooking and firm the texture. Drain and slice the belly and offal with a clean knife. If you are not assembling the platter right away, refrigerate the cuts in a covered container within 2 hours (within 1 hour above 32°C / 90°F).

  5. Prepare or steam the fresh bánh hỏi according to its package directions until hot throughout. Keep covered and serve promptly. Do not leave cooked rice products at room temperature for more than 2 hours.

  6. Warm the coconut oil until fluid but not smoking. Pour it over the sliced garlic chives and stir. Arrange the hot bánh hỏi on a serving plate and spoon the chive oil over the strands.

  7. Stir the sugar into the warm water until dissolved. Mix in fish sauce and lime juice, then add garlic and optional chili. Rinse and dry the lettuce and herbs; slice the cucumber and, just before serving, the green banana. Arrange the pork and offal on a platter with the vegetables, bánh hỏi and dipping sauce. Serve at once.

  8. Refrigerate leftovers promptly in shallow covered containers. Reheat cooked leftovers to 74°C / 165°F. Discard perishable food left at room temperature beyond the limits above.

Practical guidance

Ask the butcher for cleaned offal and keep it cold during transport. Cook the cuts in batches according to their different thicknesses, checking each one with a clean thermometer. A clean ice bath helps stop carryover cooking, but do not leave the meat sitting in it; drain and serve or refrigerate promptly. The dipping sauce can be mixed a day ahead and refrigerated. Warm bánh hỏi just before serving so the fine strands stay soft rather than drying out. If green banana is unavailable, serve more cucumber or crisp lettuce; the flavour will be different. Keep raw-meat tools away from the fresh herbs and ready-to-eat rice sheets.

Troubleshooting

Offal is still below temperature: Return that cut to the simmering pot and check again with a clean thermometer; colour is not a reliable safety test. Liver is dry or crumbly: It may have cooked longer than needed. Add it later than the heart and intestine and remove it as soon as it reaches 71°C / 160°F. Bánh hỏi sticks together: Warm it according to the package and loosen gently with a little chive oil; avoid vigorous stirring. Dip tastes too salty: Add a little warm water and lime juice, then retaste. Fish sauce varies by brand.

Frequently asked questions

Can I use dried bánh hỏi? Use fresh bánh hỏi for this version. If you have a dried product, follow its package directions and check the final texture; the amount and result may differ. Why are two temperatures listed? Whole pork belly is treated as a whole cut and needs 63°C / 145°F plus a 3-minute rest. Pork organ meats need the higher 71°C / 160°F endpoint.
