Pieróg dachnowski with buckwheat and potato
Pieróg dachnowski comes from Dachnów in Poland’s Podkarpackie region. Its defining filling combines cooked potatoes, roasted buckwheat and golden onion, wrapped in yeast dough. The name can sound like the small boiled pierogi familiar elsewhere, but this dish is baked. The Ministry of Agriculture’s traditional-products register describes oval, bun-like pieces; a contemporary regional home recipe also shows a large covered pie for sharing.
This practical version follows that large tray-pie format, using the regional filling and a soft yeast dough. It is a home-scale adaptation, not a claim that every traditional pieróg dachnowski was made as one large pie. In Dachnów, the dish was baked in a wood-fired bread oven, served for breakfast during potato digging, and sometimes eaten with goose mączka. The regional product has been on Poland’s traditional-products list since 2009.
The filling is hearty but simple: smooth mashed potato for body, separate buckwheat grains for texture, and onion softened in butter for sweetness. A golden crust encloses the filling and makes neat squares after a short rest. Plan about 3 hours 20 minutes from start to serving, including the dough’s rise.
